Brewing coffee in a Chemex is a meditative experience producing a clean coffee highlighting distinct origin-based flavours. Designed by Dr. Peter Schlumbohm in 1941, it’s elegant, hourglass-shape inspired by mid-century modern aesthetics blends artistry with functionality.

 

 

 

Chemex:

30g Coffee:

Your choice of coffee beans, ground to a medium consistency

Coffee Grinder:

To freshly grind your coffee for the best taste

For even distribution of coffee grounds

 

Prepare the Filter: Place the Chemex filter inside the Chemex, ensuring that the three-layered side covers the spout for proper airflow.

 

 

 Rinse & Preheat: Rinse the filter with hot water to remove any papery taste and to preheat the Chemex. Discard the rinse water and set the Chemex on your scales.

 

Add Coffee: Measure 30g of medium-coarse ground coffee and add it to the Chemex. Tap the sides gently to level the coffee bed, then zero your scales. You can create a small hole in the middle of the coffee bed using a pin or your finger to guide the initial pour.

 

 

Bloom: Start your timer and pour 90g of water, just off the boil, over the coffee bed. Allow the coffee to bloom for 30-45 seconds as it releases gases and prepares for extraction.

 

 

Pour: Slowly pour the remaining water in a circular motion, focusing on the edges of the coffee bed. Continue until you've poured a total of 500g of water, aiming for a total brew time of around 4-5 minutes.

 

 

Finish & Serve: Once the water has drained, discard the filter and grounds. Gently swirl the Chemex to mix the coffee before serving.

 

 

TIPS & TRICKS

Tip #1

 

Ensure Even Extraction: After your final pour, give the Chemex a gentle swirl. This helps level the coffee bed, ensuring a consistent extraction.

 

Tip #2

 

Guide the Water Flow: Create a small divot in the centre of the coffee bed using the paperclip. This helps guide the water during the pour, but be careful not to compact the grounds. Alternatively, you can use your finger to gently create the divot, ensuring the coffee bed remains light and airy.

 

Tip #3

 

Smooth Out the Coffee Bed: Use an unfolded paperclip to gently stir the coffee grounds before brewing. This helps break up any clumps, promoting even water flow and uniform flavour.
