The mountains of Southern Peru are most immediately recognisable for many as a place to connect with the history of Incan society, often visiting Machu Picchu and Cisco as a tourist. In the wider Cusco region while many of the places people visit lie high above the altitude coffee can grow, in the valleys below lie some truly exceptional coffees.


The Incahausi coo-operative CACVI was formed in 2005 right in the heart of the Cusco region with an aim to give these coffees visibility. It unites thousands of small producers around Cusco, aiding in the promotion of their coffee and providing technical support to enhance crop quality. Hugo Marino Laura is one of Incahuasi’s producers, and since we first brought Hugo’s coffee to Scotland in 2021
he has won the prestigious Cup of Excellence competition in 2022. We’re delighted to be able to bring Hugo’s coffee back.

Part of the winning formula for Hugo was embracing drying controls recommended by Incahuasi’s technical team. Traditionally, smaller producers in the Cusco region dried their coffee on tarpaulins or patios. Now, most coffee is dried on raised beds, promoting more even and controlled airflow, which raises quality and allows the coffee to shine. This results in vibrant flavour profiles distinctly different from the more well-known coffees of Northern Peru.

Hugo's coffee exemplifies the Cusco profile, balancing brightness with ripe orange, caramel and dried fruit notes. It further offers layers of sweet brown spice, roasted pecan, and a delicate jasmine florality. A crisp acidity provides excellent structure, while a smooth, buttery mouthfeel enhances the chocolate undertones, creating a moreish rounded texture.
